Under the expert (and often hilarious) guidance of Chef Andrew N. Bennardo, you will demystify the intimidating world of lobster preparation. From the science of the perfect "snap" to the buttery silkiness of a classic reduction, this session is designed for those who want to bring Five-Star steakhouse luxury into their own homes.

 

What’s on the Menu?

 

In this intensive, 3-hour hands-on session, you will master a multi-course lobster feast, featuring:

  • The Signature Prep: Learn the proper anatomy and cleaning techniques for fresh lobster. Chef Baba will teach you how to extract maximum meat and flavor while maintaining a stunning presentation.

  • Classic Lobster Thermidor: Dive into the rich history of this French-inspired dish, mastering a creamy brandy-infused sauce topped with a golden Gruyère crust.

  • Chef Baba’s "Secret" Lobster Bisque: Discover the secret to a velvet-smooth bisque, utilizing the shells to create a deep, aromatic stock that forms the "soul" of the dish.

  • Hand-Rolled Lobster Ravioli: If time and class flow permit, learn to fold delicate pasta envelopes filled with seasoned lobster tail, served with a signature brown butter and sage reduction.

 

The Experience

  • Wine & Atmosphere: As with all of Chef Baba’s sessions, the evening includes his authentic classic Italian family wine. The atmosphere is high-energy, educational, and strictly "no-snob" zone.

  • Pro-Tips & Tricks: Learn the "ice-bath" secret to preventing rubbery meat and how to gauge perfect internal temperatures without a thermometer.

  • The Grand Finale: After the hard work is done, the class transitions into a communal dinner where you’ll enjoy your creations alongside your fellow "sous chefs."
